Fruit galettes are one of my favorite things to make. They look rustic and lovely. They showcase seasonal fruits beautifully. They're a comforting dessert to serve after dinner (with a dollop of fresh whipped cream), and sweetly acceptable to have for breakfast (with a dollop of Greek yogurt). And they're very simple to make.

I used apricots for the one pictured above. I tossed the sliced fruit in a scant tablespoon of sugar to sweeten it up a bit and draw out its juices.
